Tosèla is a fresh cheese typical of these valleys, produced by the Primiero Dairy.
It is usually enjoyed cut into finger-thick slices, browned in butter, and served hot with polenta and mushrooms. It can also be eaten raw, cubed or thinly sliced like a carpaccio, dressed with balsamic vinegar and served with salad. Tosèla is made every morning from freshly milked milk, preserving all the fragrance of the alpine herbs from mountain pastures. Tosèla is available year-round at the Primiero Dairy.
