This is a cheese with a strong flavor, made from raw cow's milk.
Primiero di malga, made from the milk of cows raised on mountain pastures, is particularly prized. The aroma of mountain milk, the aging technique reminiscent of the "washed rind" of French cheeses, and the length of aging give it an intense and unmistakable aroma and flavor. It is available in various aging periods: at least 2 months for the fresh cheese, over 6 for the matured version, and up to 16-18 months for the most prized cheeses.
