It is a premium product from the Primiero and Vanoi pastures: a butter made from raw cream, naturally skimmed on the mountain pastures, and processed by the cheesemakers at the Primiero Dairy using wooden molds to create golden blocks with a delicate, floral aroma.

Production of botìro, famous during the Venetian Republic as the best butter sold in Venice, was revived in 2007 and is now protected as a Slow Food Presidium.
Its quality is guaranteed by strict production regulations. It is available, only during the summer months, at the Primiero Dairy.
