The Carnival dessert that wins everyone over

Perfect for Carnival (but let’s be honest, any excuse is good to enjoy them), these fritters are an irresistible mix of crispiness on the outside and a soft heart inside. The secret? The Renetta apple itself — an ideal variety for frying, as it keeps its texture without releasing too much water, giving every bite a sweet and aromatic flavor. And not only are they delicious, but they’re also packed with benefits! Renetta apples are rich in polyphenols — precious antioxidants that remain intact even after cooking.

- 3 Renetta apples
- 2 lemons
- 2 tablespoons brown sugar
- 2 tablespoons grappa
- cinnamon to taste
For the batter:
- 2 eggs
- 2 tablespoons brown sugar
- about 130 ml milk
- 200 g all-purpose flour
- 1 teaspoon baking powder
For frying:
- vegetable oil
- powdered sugar
METHOD:
- Peel the apples and remove the core with an apple corer, or slice them and remove the central part with a sharp knife.
- Cut into slices about 1 cm thick and let them marinate for half an hour with the sugar, lemon juice, cinnamon, and grappa.
- For the batter: in a bowl, beat the eggs with the sugar, then add the milk. Stir in the sifted flour and finally the baking powder. Whisk well until the batter is smooth and slightly thick.
- Dip one apple slice at a time into the batter, turning it several times so it’s well coated.
- Fry in hot vegetable oil until golden brown on both sides.
- Drain on paper towels and serve generously dusted with powdered sugar.
