Immersive and sensory experience dedicated to discovering the dairy supply chain of Primiero in the splendid setting of Palazzo Scopoli.

An exclusive and original event, divided into two distinct moments: sensory part and tasting part, born to pay homage to the centuries-old bond between Primiero and the dairy supply chain, a fundamental aspect of mountain culture at the foot of the magnificent Pale di San Martino.

The Day of Formage is dedicated to all cheese lovers, hardcore gastronauts, and anyone who wants to experience a series of immersive experiences that tell stories of milk, smell of hay, and taste good. A unique opportunity to deeply discover the dairy excellences of Primiero, savoring every single nuance of flavor and aroma, tasting in a new way using all the senses.

The event is divided into the following immersive experiences (book your experience in advance on the Primiero Dairy website to secure your spot or register on-site on the day of the event based on remaining availability)

Program
  • PART 1 | First group starting at 4:00 PM, last group at 6:00 PM | duration approximately 40 min. 

    CASEIFONIA: recommended for ages 12 and up. A fusion of sound and flavor, a tribute to our senses and emotions. You will be accompanied by an expert taster from ONAF in the most intimate and reserved space within Palazzo Scopoli, where you will find an oasis of relaxation.
    The lights will be turned off so that sight cannot interfere with the other senses, and in those moments, you will be accompanied by refined sounds and the taste of Primiero cheeses.
    Your mind will then be free to combine acoustic and olfactory sensations, blending sweetness and savoriness with melodies, solos, major or minor keys.
    Finally, through the sharing of your thoughts, we will write the plot of this story titled: Caseifonia.
    Let yourselves be carried away by your senses to deeply experience the dairy supply chain of Primiero.

    KIDS SPACE: up to 11 years. While the adults explore Caseifonia, the younger ones can take refuge in their very own corner!
    A cozy small room awaits them with adventure-filled books, games to unleash their imagination, and piles of sheets and colors to bring fantastic drawings to life.
    A small world of stories, games, and creativity waiting for parents and companions, to later join together for the final tasting part.

  • PART 2 | TASTING: 4 à la carte cheeses (3 for children) of your choice + 3 appetizer "cheesechetti" + 1 glass of wine or non-alcoholic drink. First group starting at 4:40 PM, last group at 6:40 PM | duration approximately 40 min. 

    “À LA CARTE” CHEESE: create your custom tasting together with an expert.
    Once "Caseifonia" is concluded, you will proceed with a tasting of local cheeses accompanied by a glass of wine from Trentino or a non-alcoholic drink, where you will create your preferred pairing.
    Whether you are lovers of fresh or aged cheeses, or daring gastronauts in search of new flavors, you will have our menu to guide you in your choice.
    Together with you, an expert from the Primiero dairy will support you, revealing all the secrets behind the dairy excellences of Primiero.
    In the enchanting wood-paneled stube from the 1600s, the tasting will take place in a convivial atmosphere, where cheese lovers can chat.

    APERICHEESE: at the end of the à la carte cheese tasting, the catering section of the Enaip Institute in Primiero will let you taste the “cheesechetti,” enticing Dolomite appetizers made from cheese and other gastronomic excellences created for the occasion.
    You will thus savor the dairy excellences of Primiero in a gourmet key, made possible thanks to the skills of the new aspiring chefs and served with professionalism under the guidance of qualified instructors.

  • Reduced ticket (ages 4 to 11): €12.00, includes access to the recreational room + the “à la carte” cheese tasting + Apericheese
