Do you have plans for the evening? What if we took our daily walk in the evening instead?
Listen up... a guided walk in the heart of the Paneveggio Pale di San Martino Natural Park under the full moon. Silence, the glow of the moon illuminates the peaks, and in the distance, you can almost hear the calls of some wild animals. Beautiful and adventurous, but where do we have dinner?
Here comes the main attraction… a stop at a mountain hut where, as the sun sets, we'll be treated to a great aperitif with Trentino wines and a taste of Primiero cheeses, followed by a local menu … I can already imagine it… steaming polenta with the typical Tosèla or a nice plate of strangolapreti, and then the Trentino desserts… delicious enough to drive you crazy!
And there’s one last surprise... joining us on the trip will be a real author, someone who writes books about mountains.
Program:
- 6:30 p.m. – Gather punctually in the parking lot next to Malga Rolle. At this time, you’ll definitely find a parking spot! The meeting with the guide is in front of the hut where our short walk begins. Aldo will be our guide, explaining the meaning and features of the Natural Park. Chiara Bettega, the author of the book, will also join us to keep us company during the evening.
- 7:30 p.m. – The welcome at the mountain hut couldn't be better: a special aperitif that becomes a journey through the signature wines of Trentino, guided by an expert. All of this paired with the flavorful cheeses from the Primiero Dairy and, with a bit of luck, a sunset over Cimon della Pala that will make all your followers envious... it's the magic of enrosadira, which, when it happens, leaves you breathless!
- 8:00 p.m. – Dinner at the mountain hut
The moment we’ve all been waiting for! The evening menu at Malga Rolle, tailored for us by Fabrizio and his staff, includes:
Starter with local cured meats and cheeses from the Primiero Dairy
Typical dish with polenta, sausage, tosèla, and mushrooms
Ricotta cake
Water, Trentino wine, and coffee are included

During dinner, the author Chiara Bettega will entertain us with live stories from her book “Climbing to Survive.” An uphill journey that begins in the mixed woods of the foothills, enters conifer forests, emerges into the violent light of alpine meadows, passes through rocky habitats, and then into the snowy zone of glaciers, finally reaching the summit. At the center, the mountain ecosystems are tested by the climate crisis, leading us into a discussion about our present. - 9:30 p.m. – Backpack on, let’s set off for the nighttime adventure! Guided by the light of the full moon, enveloped in the great silence of the night. Our guide will bring along a series of tools that might help us, with a bit of luck, to sense the presence of some wild animals. Experiencing the Park in the evening will be a unique sensory experience, and the full moon will do the rest!
- 10:30 p.m. – Return to the starting point. Your special evening ends here, and now you can enjoy a nice rest to fully experience the adventures of the next few days!
