Tosèla is a fresh cheese (more precisely, a curd) characteristic of the Valle di Primiero. It is produced with recently milked cow's milk, so that the fragrance of the mountain pastures does not get lost. You can taste it into one-inch thick slices, slowly browned in the butter, and served with polenta, mushrooms and sausage or fresh in many other versions.
The “Nostrano di Primiero” is a tasty ripe cheese produced with cow's milk. It has a straw yellow colour, with small and irregular holes and an unmistakable aroma. Its consistency varies according to the maturation process that can lasts from 2 to 14-16 months. It is ideal with polenta or to prepare tasty bread rolls.
In the local dialect, "botìro" means butter and, with its delicate flower perfume und dark yellow colour, the mountain butter is a product of excellence of our mountain pastures. It is obtained from unprocessed cream and shaped in in wooden moulds carved with decorative designs. In the past, during the Serenissima's period, the best butter on sale in Venice came from Primiero summer mountain pastures. The quality of this product was recognized in year 2009: today is the „Botìro di Primiero di malga“ one of the 177 Italian Slow-Food Presidia.
An aromatic and spicy pork sausage that you can eat uncooked, grilled or stewed with sauerkraut. You can also enjoy it seasoned and smoked, sliced like a little salami. In the past, the families reared the pig for self-consumption so the production of “lucaniche” was a winter rite occurring every year. Since 1914 the Macelleria Caser (Caoria di Canal San Bovo - Tel. +39 0439.710016) produces the “Lucanica Cauriota” and other charcuterie.
The smoked beef produced in Siror is a typical dish of our area and is to be consumed raw.
The round cuts are obtained from the deboned beef leg and then they are put into a dry pickle consisting of salt, pepper, laurel, juniper, rosemary, and eventually other natural spices for a period of 15 days. Subsequently they are dried and then smoked in the oven with leaf wood sawdust and juniper branches. Afterwards, smoked meat is matured for at least one month.
Characteristic meat conservation method used in Primiero already from the beginning of the latest century. A butcher's shop from Siror has been producing it for about thirty years (Macelleria Bonelli via Asilo a Siror - Tel. +39 0439.762233).
Unpolluted meadows, traditional bee breeding and honey extraction techniques assure the quality of the mountain honey. Our local products are the millefiori and two varieties of very fine monofloral honey: the Rhododendron honey and the wood honeydew. You can find all this product in the cooperative dairy of Primiero (Caseificio di Primiero: Mezzano, Via Roma 179, www.caseificioprimiero.com, tel. +39 0439.62491).
Because of their altitude and climate Primiero and Vanoi are not suitable places for the typical cultivations of Trentino such as apples and grapevine. Instead, this is the ideal area for the growth of small fruits: raspberries, bilberries, blackberries, strawberries and currants. Recently, many farms have started the cultivation of these tasty fruits and the production of jams and juices.
